Part One:


About the Project:
--->This Coming September 28,2012, Shin Dong will turn 28 years old (Korean Age). Since he is the Shikshin Guy (Food god) of Super Junior, We Decided to make a cookbook for him,Yes,a Cookbook! ^^ The Recipes will come from all the Elfs who support him! But there is a rule, Only 28 RECIPES will be included.(We based the number of recipes on his age) 14 Main Dish,14 Desserts. Those 28 Recipes should be delicious and nutritious.
Any NATIONAL FOOD of your Countries are welcome ^^ Let's Just avoid too much meaty and oily recipes. Let us balance the vegetables,meat and seafood^^ While on the desserts,not too much sugar/sweet or sour on your recipes. We don't want Oppa to be fat again XD
Our purpose for this is we want him to Cook the food know by his Fans, We want him to keep in touch even if we are not with him. Just Thinking that food was from his ELF ^^ Please do leave a High Quality Picture of the Food.

Cooking Instructions: How to make kimchi, the ingredients used for this recipe are:

2 large Chinese Cabbages
230g rock salt

Kimchi Sauce:
10 tablespoon of fish sauce
10 tablespoon of red pepper powder
1 onion
4-5 cloves of garlic
1 oriental pear
1 tablespoon of salt
1/2 tablespoon of sugar
small touch of ginger
4 spring onion
Start by Cutting the Chinese Cabbages in to chunks, and then soak in plenty of water and add about 180g of salt. Leave this to soak for about 4-5 hours. I use a tray from my freezer as you can see from the picture.
To create the sauce put all the ingredients in a blender except the spring onions, blend until quite fine, and slice the spring onions in to chunks and add to the mixture.
Return the drained cabbage pieces to the tray and add the Kimchi sauce, mix by hand until it is all mixed together, Taste and it should be reasonably salty, add up to a further 50g of salt if required.
Finally put the Kimchi in to some jars, leave in the fridge for a week, and it is ready to eat. The Kimchi will keep for at least 6-12 months probably longer.
Over time the flavour becomes more sour, if it becomes to sour to eat on its own use the Kimchi to make soups or stews as the soured Kimchi will add more flavour to these dishes. It is common in South Korea to make soups and stews with older Kimchi.
It can be eaten raw as a side-dish, or added to soups and other Korean dishes that are available on this site.

Since he will celebrate his Special Day, we want to give food support, Lunch Boxes,Birthday Cake and other sweets. But we cannot do this fully so we are asking your help to make this possible. Help us to make this successful by donating any amount to this project. There will be also a message box for him that will be full of birthday and supporting messages for him.

Part 1
Shin Dong Hee's "SHINDELICIOUS" Cook Book
Tentang projek ini:
--> 28 September 2012 ini, Shindong akan berumur 28 tahun (umur korea). Karena dia adalah dewa makanannya super junior (shikshin guy), maka kita berencana membuatkannya buku resep, benar, buku resep!! ^^ Resep-resep makanannya datang dari seluruh ELF yang mendukungnya! Tapi ada syaratnya, hanya 28 RESEP yang dimasukkan (sesuai dengan umur shindong). Jadi 14 makanan pokok, 14 makanan pencuci mulut. 28 resep makanan tersebut haruslah lezat dan bernutrisi.
Apapun MAKANAN NASIONAL negaramu, kami terima ^^ mari kita hindari makanan yg terlalu banyak lemak dan minyak. Jadi kita seimbangkan sayuran, daging dll. Jika itu dessert/pencuci mulut, jangan terlalu banyak gula dan asam. Kita nggak ingin oppa gendut lagi XD
Tujuan kita adalah kita ingin oppa masak masakan kita, kita juga ingin dia mengenang kita walau kita nggak ada di sampingnya. Memikirkan kalau makanan ini dari ELF ^^ tolong kasih kualitas foto yang bagus untuk gambar makanannya.

--> kita menyadari shindong sangat senang ketika ELF memberikan dukungan makanan (food support) untuk mereka ketika ada acara-acara. Karena dia akan merayakan hari istimewanya, kita ingin memberikan food support, lunchbox, kue ulang tahun, dan makanan manis lainnya. Tetapi kita tidak bisa melakukan semuanya, jadi kita meminta bantuan kalian untuk membuatnya jadi mungkin. Acerca del proyecto:
El próximo 28 de Setiembre,2012, ShinDong cumplirá 28 años (edad coreana). Puesto que él es el chico Shikshin (Dios de la comida) de Super Junior, hemos decidimos hacer un libro de cocina para él, sí, un libro de cocina!!!! ^ ^ Las Recetas serán por parte de todas las ELFs que quieran apoyarlo… Pero hay una regla, sólo serán 28 RECETAS que serán incluidas en este libro. (Nosotras nos basamos en el número de recetas por su edad) 14 Platos Principales, 14postres. Las 28 recetas deben ser deliciosas y nutritivas.
Cualquier COMIDA NACIONAL de tu país es bienvenida ^ ^ Solo evitemos las comidas muy carnosas o aceitosas. Balanceemos los vegetales, carnes y mariscos ^^ Mientras que los postres no muy azucarados/dulces o agrio en las recetas. No queremos que Oppa se vuelva gordo de nuevo xDD
El propósito de esto es que queremos que el cocine y conosca las comidas que sus fans han hecho para el, queremos estar cerca a el incluso si nos encontramos lejos en países distintos. ---> Le 28 septembre 2012, Shin Dong aura 28 ans (âge coréen). Puisqu'il est le Shikshin Guy (Dieu de la nourriture) des Super junior, nous avons décidé de faire un livre de recettes pour lui. Oui, un livre de recette ! ^^ Les recettes viendront de toutes les ELF qui le supportent ! Mais il y a un règle. Seulement 28 recettes seront incluses (Nous baserons le nombre de recettes sur leur âge) 14 plats principaux et 14 desserts. Les 28 recettes doivent être délicieuses et nutritives.
Toutes les nourritures nationales de vôtre pays sont les bienvenue ^^ Évitons simplement les recettes avec trop de viande et trop d'huile. Équilibrons les légumes, la viande et les fruits de mer ^^ Pour les desserts, pas trop de sucre et acidité dans vos recettes. Nous ne volons pas que Oppa redevienne gros à nouveau xD
Notre but est que nous voulons qu'il cuisine la nourriture connue par ses fans. Nous voulons qu'il reste en contact même si nous ne sommes pas avec lui, qu'il pense que cette nourriture vient de ses ELF ^^ S'il vous plaît, ajoutez une photo de la recette de haute qualité. ---> Nous avons remarqué que Shindong est vraiment heureux quand les ELFs lui donnent un soutient nourriture quand il y a un événement. Puisqu'il va célébrer sa journée spéciale, nous voulons lui donner un soutient nourriture. Luch box, gâteaux d'anniversaire et d'autre sucreries. Mais nous ne pouvons pas le faire seul donc nous vous demandons votre aide pour réaliser cela. Aidez-nous à rendre cela possible en faisant un don d'un n'importe quel montant pour ce projet. Il y aura aussi une boîte à message pour lui dans lequel il y aura plein de messages d'anniversaire et de soutient. Nous donnerons le soutient nourriture avec l'aide des ELFs coréennes ^^

I want ShinDong to Cook this Recipe Because: It is full of nutrients and vegetables. Since he is watching his weight this soup will fill him up nicely while it's not fattening (Even I can eat it with my diet)
Also It is perfect for a cold winters day and will make you feel like home.

Snert is a bit hard to make but I have other Traditional Dutch recipes he might like that are easier to make.

Ingredients for 6 to 12 persons
500 gram (2 1/2 cup) split peas
1 piece of gammon with bone, or pork hock, about 500 gram (1 pound), or spareribs, or two pig's trotters
100 gram (3 ounces) streaky bacon or Dutch 'sauerkraut bacon': streaky pork, salted but not smoked, preferrably with rind
1 smoked sausage
2 large onions, chopped not too small
1 large carrotl
2 leeks
1 celeriac
2 potatoes
1 bunch celery
pepper and salt to taste
2 litres (8 cups/4 pints) water to start with
bread or rye bread (pumpernickel), with -if you can get it- slices of katenspek (lightly streaked pork, first boiled and then smoked black)

Rinse the split peas in a sieve under the running tap. You do not need to let them soak in water. Bring water to the boil with the peas, gammon and bacon. Let it boil and skim off the floating scum. Pour off, rinse again and put peas and meat back on the fire with clean water.

While peas and meat are gently cooking you prepare the vegetables:
Cut the skin of the celeriac, peel the potatoes, and dice celeriac and potatoes. Peel the carrot and dice it. Cut the leeks and wash them. Add the vegetables to the pan and let simmer until the peas are done (one and a half to two hours, the split peas must be broken).
Take the meat out of the pan, remove rind and bones, and cut it in small pieces. Return the meat to the pan. Wash the sprigs of celery, and chop or cut the leaves. Twenty minutes before the end of cooking add the whole smoked sausage and the celery. Taste, finish off with pepper and salt.
The pea soup is still fairly liquid. Let it cool completely and reheat it the next day, or freeze in portions. When you want to freeze the soup, add the smoked sausage when reheating, or divide the sausage in equal quantities over the portions.

Rehating the soup
Take care when you reheat the soup to do this very gently and stirring frequently, to prevent a thick black crust forming on the bottom of the pan. To heat smaller amounts, use the microwave. Another way to heat a large amount of snert is placing the whole pan (with ovenproof handles!) in the oven at 120dgC/250dgF. But even then, stir the soup once in a while.

To serve
In large bowls, with bread. Older cookbooks (nineteeth century) prescribe toasted white bread, later cookbooks rye bread (pumpernickel), with katenspek or other cooked and smoked streaky bacon. And no one will punish you if you use French bread instead.

Preparation time: 30 minutes
Estimated cooking time: 1 hour

Leche Flan Ingredients:
1 can (390g) evaporated milk
1 can (390g) condensed milk
10 egg yolks
1 teaspoon of vanilla extract or lemon essence
For the caramel:
1 cup sugar
3/4 cup water
Leche Flan Cooking Instructions:
In a saucepan, mix the sugar & water. Bring to a boil for a few minutes until the sugar caramelize.
Pour the caramelized sugar into aluminum moulds - you can use any shape: oval, round or square. Spread the caramel on the bottom of the moulds.
Mix well the evaporated milk, condensed milk, egg yolks and vanilla by hand or blender.
Gently pour the mixture on top of the caramel on the aluminum moulds. Fill the moulds to about 1 to 1 1/4 inch thick.
Cover moulds individually with aluminum foil.
Steam for about 20 minutes (the traditional way to make Leche Flan is by open-air steaming on either an open cooking fire or stove top) OR
Bake for about 45 minutes. Before baking the Leche Flan, place the moulds on a larger baking pan half filled with very hot water. Pre-heat oven to about 370 degrees before baking.
Let cool then refrigerate.
To serve: run a thin knife around the edges of the mould to loosen the Leche Flan. Place a platter on top of the mould and quickly turn upside down to position the golden brown caramel on top.
Cooking Tips:
You can tell when the Leche Flan is cooked by inserting a knife -if it comes out clean, it is cooked.

Cooking Instructions

1/2 large onion
3 cloves of garlic
1/2 inch piece of ginger
4-6 oxtail pieces
1-1/2 pound piece of beef brisket
1/2 pound of tripe (you may omit)
4 inch piece of cinnamon bark
1 tsp. whole cloves,1 whole cardamom
1-1/2 tsp. whole fennel seeds
1 star anise
2 tsp. whole coriander, 2 tsp. of pepper
3-5 tsp. of salt or use 5-6 beef boullion cubes
1 16-oz. package of pho/phad thai rice noodles (the thinner the better)
2 green onions
1/4 cup sugar, 5 sprigs of fresh cilantro

1. Bring a large pot of water to boil (about 6 cups).
2. Add oxtail and brisket. Bring to boil. Reduce heat and simmer for four hours.
3. Wrap up the coriander, fennel, cloves, cardamom and star anise into a neat package in the piece of cheesecloth.
4. During the final hour of cooking, add the onion, cloves, seasoning package, ginger, pepper, sugar and salt. Let simmer for half an hour. Strain broth of solid ingredients and return to simmer another half hour. After four hours the oxtail should be nice and tender; if not, simmer a little longer. Add tripe.
5. Bring another pot of water to boil. Add one package of pho rice noodles to boil until soft.
6. Season the broth to taste.
7. Chop cilantro and green onions and sprinkle on top of broth.
8. Drain noodles.
9. Divide noodles into bowls, add meat and cover with broth.

2 1/2 cups rolled oats
3/4 cup desiccated coconut
1 cup milk choc bits
2/3 cup firmly-packed brown sugar
2/3 cup plain flour
1/2 teaspoon baking powder
1/2 cup light olive oil (or 1/4 cup)
1/3 cup milk
1 egg

1. Preheat oven to 180°C. Grease a 3cm-deep, 18cm x 28cm (base) slab pan. Line with baking paper.
2. Combine oats, coconut, choc bits and sugar in a large bowl. Sift flour and baking powder together over the oat mixture.
3. Whisk oil, milk and egg together. Add to oat mixture. Stir until well combined. Spoon mixture into prepared pan. Using the back of a spoon, press mixture into pan. Bake for 20 minutes or until light golden and set.
4. Stand slice in pan for 15 minutes. Lift onto a wire rack. Allow to cool. Cut into pieces. Serve.

Cooking ingredient :
– 3 cans of young jackfruit
– 1 can coconut milk
– 800 ml of water of tea
– hard-boiled eggs to taste (do not boil over time, as long as solid only), skinned

Cooking Instructions
- 1 thinly sliced medium sized fresh cucumber, 2 fried tempe (soybean patties), 2 pieces of fried tofu, and a hard boiled egg cut into 4 pieces
- For blanched vegetables:
1 cup of string beans cut into 4 cm long pieces, 1 cup of shredded cabbage, 1 cup of mung bean sprouts, 2 small chayotes cut into wedges (2 cups’ worth), 1 cup of water spinach (“ong choy”), 1 cup of Chinese spinach
- For the sauce:
ground roasted peanuts, bird’s eye chilis, dried shrimp paste (terasi), palm sugar, salt, tamarind, and water
- For garnish:
fried shallots, shrimp crackers, emping (gnetum gnemon chips called “Melinjo” in Indonesian)
- Optional:
1 medium sized steamed potato cut into bite size pieces

- Blanch and strain Chinese spinach, water spinach, string beans, mung bean sprouts, cabbage and slice 1 cucumber.

Make sauce using a mortar and pestle
cooking time: 20-30 minutes
- Grind these ingredients with a mortar and pestle until they’re smooth: 1 ts salt, 2 ts dried shrimp paste, 3 red bird’s eye chilis, and ¼ cup’s worth of palm sugar
- Add 1 cup of finely ground roasted peanuts (or 1 cup of peanut butter) and grind it all some more until it’s mixed well. If you use peanut butter instead of ground roasted peanuts, add less salt because there’s salt in the peanut butter
- Mix 1 tbs (about 20 grams) of tamarind with ¼ cup of hot water in a small bowl. Add the juice to the sauce
- Add ½ cup of water and mix it well
- Transfer the vegetables to a serving plate and pour the sauce on top of it or mix all the vegetables with the sauce in the mortar before serving
- Add a sliced hard-boiled egg on top and garnish with fried shallots, shrimp crackers and emping

Or make sauce using a food processor
cooking time: 15-20 minutes
- Grind 1 cup of roasted peanuts, 1 ts salt, 2 ts dried shrimp paste, 3 red bird’s eye chilis, and ¼ cup’s worth of palm sugar in a food processor until smooth
- In a bowl, mix the blanched vegetables with the sauce. Transfer to a serving plate
- Garnish with fried shallots, shrimp crackers, and emping

Ingredients :

1 large skinless and boneless Chicken Breast, cut into 1 inch cubes
1 large Shallot, finely chopped
4 cloves Garlic, finely chopped
2 Fresh Chillis, seeded and finely chopped (or 1 tsp chili paste)
2 tablespoonful Fresh Ginger, finely chopped
1 tablespoonful Fresh Coriander, chopped
1 teaspoonful Sesame Oil,
2 teaspoonful Dark Soya Sauce (kecap manis)
1 tablespoonful Fresh lemon juice
1/4 cup Coconut Milk
1/4 cup Water

Cooking Direction :

Put all ingredients together in a plastic bag and mix and coat the chicken well.
Put chicken in the fridge to marinate for two to six hours.

Soak bamboo skewers in warm water for at least 20 minutes before skewering the chicken cubes.
Arrange chicken into the bamboo skewers
Leave a bit of space between meat pieces to ensure even cooking.

Barbecue over medium-high temperature for 5 to 8 minutes, basting with the marinade and turning frequently

Fruit Ingredients:

Cooking Instructions
Servings: 6 rolls for 2 people

For the Spring Rolls
6 sheets rice paper
2 large leaves of green lettuce, cut into small pieces
3 ounces rice vermicelli, cooked
1/2 cup cilantro, chopped
12 mint leaves
9 large shrimps, cooked, peeled, deveined and cut in halfs
(Be creative, you can add more protein to your diet by using boiled pork, crab, or any other meat you have in mind)

For the Dipping Sauce
1 tablespoons fish sauce
3 tablespoons warm water
1 1/2 tablespoons fresh lime juice
3/4 clove garlic, minced
1 1/4 tablespoons white sugar
1/3 teaspoon garlic chili sauce (Chirashi)
2 3/4 tablespoons hoisin sauce
1 teaspoon finely chopped peanuts

Bring the water to boil. Boil rice vermicelli 3 to 5 minutes, or until al dente, and drain.
Dip the rice paper in a large bow of warm water so it will become soft
Place the rice paper on a flat area, then stack small amount of lettuce, rice noddles, cilantro, mint leaves, and 3 haft shrimps
Roll the rice paper

Cooking Instructions:
1 1/4 cup (250 g) cottage cheese (with a high fat percentage)
1 egg
2/3 cup (100 g) AP flour
2 tablespoons (30 g) granulated sugar
1/2 teaspoon backing soda
lemon zest, vanilla, to taste
a pinch of salt
oil, for deep frying
sour cherry preserves and sour cream for serving

How to cook:
Mix well all ingredients (except oil) with a fork, for 2 minutes. With your hands make large balls (app. as a tennis ball). Take one and with your finger make a small hole in the middle. Repeat for all balls.
Heat a frying pan, add the oil and heat it well. Fry the balls at medium heat until brown.
Serve hot, with sour cream and sour cherry preserves (or any jam that you have).

Cooking instructions:

Ingredients for 6 dumplings (aprox. 20 minutes)
175 g. polenta
1/2 teaspons salt
6 cubes hard butter measuring 1 cm.
6 cubes strong hard cheese ,such as haloumi or parmesan, measuring 1 cm.
300 ml. sour cream (optional)

1. Put the polenta and salt in a large saucepan with 600 ml. of water;
2. Bring to a boil,stirring constantly ,and cook for 5-8 minutes,still stirring,until the mixture is thick;
3. Pour the mixture onto a plate and let it cool down.
4. Divide the mixture into 6 and form each piece as a thick circle shape.
5. Place a cube of butter and a cube of cheese in the middle of each ; wet your hands and shape them into round dumplings.
6. Cook the on the grill for about 10 minutes.
7. You can serve it topped with sour cream.

5 peppers
4 to 5 onions
1-2 tomatoes
1 cupful mushrooms
1/3 cupful of White Wine
Half a cupful lard or sunflower oil

Cooking Instructions
- 2 1/2 cups all-purpose flour
- 2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup butter, room temperature
- 1 cup sugar
- 1/2 cup brown sugar
- 1 large egg
- 2 teaspoon maple extract
- 4 tablespoon butter, room temperature
- 1 cup confectioners sugar
- 2 tablespoon maple syrup


1. In a medium bowl, whisk together flour, baking powder and salt; set aside.
2. In the bowl of a stand mixer fitted with the paddle attachment, beat butter and sugars until light and fluffy, about 3 minutes. Add the egg and maple extract; beat at medium speed until combined, about 30 seconds. Add the dry ingredients and beat at low speed until just combined, about 30 seconds, scraping down the bowl as needed.
3. Divide dough into two balls and flatten each ball into a disk. Wrap each disk in plastic wrap and refrigerate at least 1 hour.
4. Preheat oven to 375 degrees F. Line baking sheets with parchment paper. Remove dough from refrigerator onto a lightly floured surface.
5. With a rolling pin, roll the dough out to 1/4-inch thickness. Use a maple leaf cookie cutter to cut out cookies, placing on prepared baking sheet.
6. Bake cookies in preheated oven 8-10 minutes, or until edges just start to brown.
7. Cool the cookies on the baking sheets about 3 minutes; using a wide metal spatula, transfer the cookies to a wire rack and cool to room temperature.
8. While cookies are cooling, make the filling by creaming butter in a stand mixer. Add confectioners sugar and maple syrup and beat until combined and smooth.
9. Using a knife or spoon, spread the filling onto the backside side of the cookie. Top with another cookie, backside down. Repeat with the remaining cookies.
